THE RESTAURANT

Owners Vince and Jennifer Potter have created a truly unique restaurant. Curious Thymes Bistro offers carefully selected items that appeal to all tastebud’s from Caesar salads and Chicken Marsala to Wild Kangaroo and Sea Urchin. The restaurant is also fully licensed and offers a wild selection of beers and cocktails. The restaurant also offers Thyme for Tea, with over 30 different teas to choose from.

Whether you’re looking to have a great thyme with friends or a quiet dinner for 2 come on in to Curious Thymes and let us satisfy your tastebud’s.

Jennifer and Vince Potter ~ Owners
Jennifer and Vince Potter are excited to offer Sudbury a new healthy place to eat. Inspired by the want to provide something fresh and unique, only the finest herbs and highest quality foods are served at Curious Thymes Bistro. When you visit Curious Thymes you will find that there are no deep fried foods on the menu, this comes from a choice to offer a healthy dining experience to the guests.

Jennifer grew up in Sudbury, then went on to Canadore College in North Bay to study Hospitality Administration. Jennifer then spent a few years in Jasper Alberta at the Jasper Park Lodge, starting as a server then progressing to assistant Maitre D’ in the Meadows Cafe and Beauvert Dining room. She then moved to the UK for several years to expand her knowledge and experiences. This is where she and Vince met.

Vince attended Teesside College as well as the University of Birmingham to study undergrad International Hospitality Business Management. As part of his degree Vince also received his 706-1 basic chef training, his 706-2 chef papers and his 706-3 pastry chef papers. He has opened restaurants such as the alfresco dining in the Royal opera House, National Portrait Gallery Fine Dining Restaurant over looking Trafalgar Square London and many others.

Together, this power team has created one of the most unique restaurants Sudbury has. They have a great team helping to support them and all they want to offer to the North. We invite you to come in and meet Jennifer and Vince along with their staff.

Jeff Grenier ~ Head Cook
Jeff is a trained chef from Cambrian College and also has over 10 years experience in the industry. After not making it as a professional musician Jeff needed an outlet for his creative flare. He says plating and building creative dishes is his passion. Jeff joined Curious Thymes to be part of something new and to bring exciting new creations to Sudbury customers. He likes that this place is not afraid to challenge the normal and get away from deep frying! Jeff is looking to advance his career by gaining his red seal certification and become Executive Chef – he plans to write his papers this year!

Justin Chaumont ~ Cook
Justin Chaumont joined Curious Thymes Bistro so he could learn to cook new foods. He has experience in the Restaurant industry from working at places such as Casey’s, Timber wolf Golf Course and more. He is looking forward to attending college this September and keeping up with sports; he is an excellent hockey player. Justin says the best part of working at the Bistro is learning to cook new foods and the fun, stress free environment.

KATHRYN LAJEUNESSE ~ SUPERVISOR/SERVER
Katie has over 10 years serving experience behind her. She is an excellent trainer and people person. She has completed a 3 year course at Cambrian College for Physical Fitness and Leisure Management however felt herself drawn to the Hospitality Industry. She is inspired by constantly learning new things and looks to be a Manager one day at Curious Thymes so in the mean time she is learning how to count stock, place orders and delegate to Team members. Katie recommends ordering the Kangaroo on the menu, it’s a sweet meat similar to Lamb and she was surprised at how tasty it was! Katie is working hard to purchase a house this year with her fiancée.  
She lives by the KISS principal “keep it simple stupid”

Katie Mazi ~ Server
Katie has just completed a 2 year course at Laurentian in Sports and Phys Ed Concurrent Education she joined Curious Thymes Bistro for a fun summer experience where she could learn about new foods and cooking methods while meeting new people. She inspires to do the best she can and enjoys the Team work here. Her favorite item on the Lunch Menu is the Apple & Walnut Salad as it is both healthy and full of taste.

James H. Thomson ~ Cook
James completed Chef Training at Cambrian College and has enjoyed different experiences while on the course for example he went with Michael Cullen (from the Yum Academy) to Hawaii for a NASA Research Facility cooking experience. He loves creating new and exciting dishes and highly recommends the red deer medallions on our dinner menu for the different mix of flavors. While in Hawaii he was able to experiment with different fresh fish dishes and Asian spices and likes to incorporate these ideas in the daily features he creates. Not a real morning person he needs several coffees to kick- start his day!

Mark MacLean ~ Cook
Mark is originally from Cape Breton Island Nova Scotia and has attended Cambrian College Chef Training course. He has a passion for cooking and enjoys the freedom of cooking at Curious Thymes for the different cooking methods and ingredients we use. Mark is inspired by getting people to look at different foods and change/improve their diets. He loves the Crab Bisque we make here and recommends that as a 1st course. For dinner choose the Veggie Lasagna or the Goat Cheese Stuffed Chicken. Mark had never tired duck or alligator before working here and was surprised at how tasty both are if prepared properly. “Do good things and you will feel good about them, do bad things and you will feel bad”

Denise Strand ~ Server
Denise is at Laurentian University taking Psychology and will graduate in 3 years she previously took Law and Security. She has been in and out of serving for years and likes it as 2 days are never the same, there are always new challenges. She is inspired by her son Ryan who is just the cutest little guy ever. Denise loves the mint chocolate cheesecakes and highly recommends it to everyone – ‘sinfully delicious’. While working here she has been encouraged by the Team to create new dishes at home with much success. Thanks to Jeff for all the tips and secret recipes. “Life is short eat chocolate! Life is too short to worry over the small things, and in the end it’s all small things”.

Samantha Foreshew ~ Server
Samantha has recently graduated from Laurentian University with an English Rhetoric and Media Studies Honors Degree. She has taken time off school to get a feel of what the working world has to offer. Samantha is excited to have the opportunity to finally be part of this new venture for Sudbury. What she enjoys most about Curious Thymes is the overall unique dinning experience that guests are offered and the opportunities that staff have to improve their skills. When she has time off Sam loves nothing more than to spend time with family and friends cooking BBQ steaks! Her future goals are to join the nursing program while working in the hospitality business.

Sam Brazeau ~ Cook
Sam has an extensive background in the hospitality field she started working at D’Amours Speciltity Cakes which supplies desserts for the Fish Bowl and grocery stores in Timmins. In Kirkfield Ontario she was a Sous Chef / Baker at a kid’s camp for a season. She completed both the Hotel & Restaurant Program and Baking & Pastry Arts Program at Cambrian College. She plans to also complete the Chef Training Course. Sam is inspired by the food and its ability to be manipulated. “A plate is like a canvas to a painter, anything is possible if you just put it out there”. So as you can see she fits right into this place! She recommends the goat cheese stuffed chicken and the Elk both dishes are both tender and tasty. “What’s the rush? Life is not going anywhere!”

Kassandra Pinard ~ Hostess/Server
Kassandra has joined the Team as a Hostess as she trains to be a server. She has worked at Ristorante Verdicchio as a buss person and currently also works for the Canadian Blood Bank as well as Curious Thymes Bistro. Kassandra met Vince while at Verdicchio and was inspired by his outlook on creative cooking. When she found out what was on the menu here she quickly applied to work with the Team. Kassandra enjoyed helping out with the ‘Savour the Street event” where she was part of the team that served 300 people dinner outside! “Live Well. Laugh Often!”

Melissa Perih ~ Hostess/Server
Melissa has just joined the Team as a Hostess as she trains to be a server. She has worked at Casey’s / Pat & Mario’s as a hostess in the past and loves the people she meets here. She likes being part of a small team where the focus is on the Guest experience. She loved helping out at the down town event “Savour the Street Event Sudbury” where we served our Duck & Kangaroo consume. Melissa will be training to be a server.

Renee ~ Server/Supervisor
Renee has been with Curious Thymes since day 1! She is currently working to complete a degree in Nutrition and Dietetics at Acadia University in hopes to one day to be a Registered Dietitian. With each menu Renee offers her advice to encourage a healthy balance and options for those with diet restrictions. Renee loves the outdoors and spends her days off hiking, kayaking and fishing. She recommends for lunch the med vegetable sandwich with spicy pumpkin soup! “Live simply so that others may simply live.”

Katrina McCracken ~ Server
Katrina has recently completed her B.E.D at Laurentian University. While she patiently makes her way into teaching she has joined the Curious Thymes Team. She is inspired by sunshine, smiles and a good dining experience that leaves her tummy feeling fulfilled. For all the lovers of literary arts, Katrina recommends the Fried Green Tomatoes. She looks forward to trying the Kangaroo in the trio of exotic game meats fondue. “Breathe when you are feeling anxious or overwhelmed. Something so simple is often forgotten and than let the sunshine in”.

Tess Chevrier ~ Server
Tess takes on so many projects she hardly has time for her friends and family! Tess teaches summer classes to children in the mornings and evenings 5 days a week she also grabbed the opportunity to work with the Dean of her department working on labs during the year. During the school year she tutors while attending school and still finds time to pick up a shift or 2 here at Curious Thyme’s. Tess enjoys the relaxed, fine dining experience and the lovely guests. She loves the Goat’s Cheese Stuffed Chicken and Chocolate Fondue. She finds it exciting that each time she comes in for a shift that something has changed – it keeps her on her toes! She recommends the feature drinks as they are always completely different to anything you have ever tried.

Leigh Behnke ~ Server
Leigh is currently taking H.B Commerce program at Laurentian University. She loves sports like volleyball and dance; she really enjoyed assisting in dance classes. Leigh is bilingual which she feels is an asset while serving here. The different styles of service are what keeps things interesting here, she likes that we have breakfast, brunch (on weekends), lunch, high tea (between 2:00 – 5:00 pm) and dinner so the shifts are always different.

Monique Trottier ~ Server
Monique has just had a baby boy named Kaleb; so she is on Maternity leave at the moment however keeps up to date on what is going on by dropping by with baby Kaleb for visits. Monique thinks good service comes with a smile especially when you drop yogurt on a guest on your last day! She is anxious to return to work as she misses the family like atmosphere here. Monique loves the fresh ingredients we use to create our dishes and is lucky to live with someone who is an excellent, creative individual (Jeff).
